After a long day at work, the last thing you want to be doing is fussing over a long ingredient list and spending hours preparing a meal. Here are the recipes you saw on IG; a collection of the best, easy lunch salads that can be converted to dinners. Keep it fresh and healthy while still hitting the spot so you do not have to go to bed hungry!
** I used my already roasted chicken breast, broth, and my cooked bacon. I then, chopped vegetable ingredients for all four salads at once under an hour. but, you can do one at a time of course!
Thai Chicken Salad
Grab a Cole Slaw Mix OR make your slaw mix using;
4 C carrots -cabbage- broccoli
1/4 C Scallions
2 Red Bell Peppers
1 bunch Cilantro
2 cooked shredded chicken breasts
Now for the Dressing…..
5 Tbsp Peanut Butter
2Tbsp Soy Sauce
1 Tbsp Lime juice
1 Tbsp Honey
1 Tbsp Sesame oil
1 tsp Ginger fresh/powder
1 tsp Garlic fresh/powder
BLT Salad
Gather and chop….
4 Chicken Breasts
32 oz. Bacon
2 Red Onion
16 oz. Cherry Tomatoes
1 bunch of Scallions
Dressing - Mix…..
1/2 C Mayo
1/2 C Greek Yogurt
1 tsp. Paprika
1 Tbsp Garlic Powder
1 Tbsp Onion Powder
Mix them all and you can place them into a tortilla or lettuce boat!
Cowboy Salad
2 Corn off the cob ( or 1 can of corn)
2 Cans Black Beans Rinsed and drained
about 16 oz. Cherry Tomatoes
1 large Red Onion
2 Bell Pepper
1 bunch Cilantro
Great as is OR to make it sweet and tangy try this dressing to taste……
1/4 C Honey
Juice of 1 whole lemon
1 sp. Garlic
Salt and Pepper to taste
High Protein Summer Salad
2 Red Bell Pepper
1 Red Onion
1 bunch Parsley
2 cans White Beans drained & rinsed
16 oz. Pepperoni
8 oz. Pepperoncini's
1 bunch Celery
Dressing……
1/4 C Red Wine Vinegar
1/4 C Olive Oil
Juice of 1 fresh lemon
